										<content:encoded><![CDATA[<p>I have seriously fallen in love with the humble pumpkin this year, and this is another recipe that I just had to try! We&#8217;re huge fans of ginger and it works perfectly with the pumpkin in this squidgy pumpkin and ginger loaf. It tastes even better if you wrap it up well in parchment paper and then in foil for a few days before eating it &#8211; it&#8217;s very difficult to do this but it&#8217;s so worth it! <span id="more-6164"></span></p>
<p>&nbsp;</p>
<p>This recipe is taken from this month&#8217;s birthday edition of BBC Good Food magazine.</p>
<p>&nbsp;</p>
<h3>Ingredients</h3>
<p>&nbsp;</p>
<p>250g/9oz chunk of pumpkin or squash flesh</p>
<p>50g/2oz black treacle</p>
<p>140g/5oz golden syrup</p>
<p>140g/5oz light soft brown sugar</p>
<p>100ml/3 ½ fl oz semi-skimmed milk</p>
<p>100g/4oz cold butter, diced (plus extra for greasing)</p>
<p>225g/8oz self-raising flour</p>
<p>1 tsp bicarbonate of soda</p>
<p>1 tbsp ground ginger</p>
<p>2 tsp mixed spice</p>
<p>2 medium eggs, beaten</p>
<p>8-10 chunks crystallised ginger, thinly sliced</p>
<p>&nbsp;</p>
<h3>Method</h3>
<p>&nbsp;</p>
<p>1. Put the pumpkin or squash in a microwave-proof bowl with a dribble of water. Cover with cling film, pierce with a couple of holes and cook in a microwave on High for 5-10 mins (alternatively, chop into chunks and boil in a pan of water for 10-15 mins), and leave to cool. Mash or blitz in a food processor until smooth.</p>
<p>&nbsp;</p>
<p>2. Put the treacle, syrup, sugar and milk in a pan and heat gently until the sugar has dissolved. Set aside to cool a little.</p>
<p>&nbsp;</p>
<p>3. Heat the oven to 180C/160C fan/gas mark 4, and line a 900g loaf tin with greaseproof paper. Sift the flour, bicarb, spices and a pinch of salt into a bowl together. Tip in the diced butter and rub it in with your fingertips until no big lumps remain.</p>
<p>&nbsp;</p>
<p>4. Whisk the mash and the egg into the lukewarm syrupy mixture, and then stir everything into the dry ingredients. Pour the batter into the prepared tin and then scatter most of the crystallised ginger on top.</p>
<p>&nbsp;</p>
<p>5. Bake in the oven for around 45 mins or until a skewer poked in the centre comes out with just moist crumbs attached. Scatter over the remaining sliced ginger to stick and then cool in the tin.</p>
<p>&nbsp;</p>

<p>Halloween is just a couple of days away, but if you haven&#8217;t got your pumpkin sorted yet, don&#8217;t worry! I spotted this really cool owl pumpkin template on the <a title="Hobbycraft blog" href="http://blog.hobbycraft.co.uk/printable-owl-pumpkin-carving-template/" target="_blank" rel="noopener noreferrer">Hobbycraft blog</a> and knew that I would have to give it a go. I usually go for super smiley pumpkins and thought this would be something different to do this year &#8211; and, of course, I LOVE owls! <span id="more-6153"></span></p>
<p>&nbsp;</p>
<h3>You will need:</h3>
<p>A medium-sized pumpkin</p>
<p>A sharp knife for carving the pumpkin</p>
<p>My secret carving weapon: a soup spoon!</p>
<p>A print out of the template (which can be downloaded from the blog &#8211; I reduced it to 60% of the original size)</p>
<p>Scissors or a craft knife to cut out the template</p>
<p>Some tape</p>
<p>A marker pen</p>
<p>A tea light (or LED safety alternative if you prefer)</p>
<p>&nbsp;</p>
<h3>Step 1</h3>
<p>Carefully cut the top off the pumpkin and then scoop out the insides &#8211; this is what the soup spoon is for! They are brilliant for scooping <img src="https://s.w.org/images/core/emoji/16.0.1/72x72/1f642.png" alt="🙂" class="wp-smiley" style="height: 1em; max-height: 1em;" /></p>
<h3>Step 2</h3>
<p>Cut out the template and then tape it to the pumpkin. Draw along the inside of the lines to mark on where you need to carve the owl design and then carefully remove the template.</p>
<h3>Step 3</h3>
<p>Carve out the design, making sure that you are as careful as possible. I realised as I was cutting that I had accidentally cut out one of the eye middles when I should have left it in &#8211; so I had to cut out the other one too! But I don&#8217;t think it matters too much.</p>

<p>There are one or two rough edges, but you can&#8217;t tell with the lights off and the tea light inside. Parts of this were a bit fiddly to carve, especially with the detail around the eyes. But take your time and you&#8217;ll have a really effective owl pumpkin.</p>

										<content:encoded><![CDATA[<p>I love autumn, and I really enjoy finding new seasonal recipes to try out. <span id="more-6058"></span>I never really used to cook or bake with pumpkin, but it&#8217;s such a great ingredient &#8211; it keeps this cake beautifully moist. You might have to have more than one slice of this pumpkin lemon and poppy seed loaf&#8230;</p>
<p>&nbsp;</p>

<p>&nbsp;</p>
<h3>Ingredients</h3>
<p>&nbsp;</p>
<p>225g peeled and deseeded pumpkin or butternut squash, cubed<br />
4 tbsp full cream milk<br />
1 large egg<br />
175g self-raising flour<br />
1/2 tsp baking powder<br />
1/4 tsp bicarbonate of soda<br />
150g caster sugar<br />
11/2 tsp mixed spice<br />
1/2 tsp grated nutmeg<br />
50g unsalted butter, cut into small pieces<br />
2 tbsp poppy seeds<br />
Grated zest of 1 small lemon</p>
<p>&nbsp;</p>
<h3>Method</h3>
<p>&nbsp;</p>
<p>1. Preheat the oven to 180°C/fan160°C/gas 4. Grease a 900g loaf tin and line with baking paper or greaseproof paper, then grease well once more.</p>
<p>&nbsp;</p>
<p>2. Cook the pumpkin in boiling water for 10-15 minutes, until tender. Drain well and leave until the steam dies down and the pumpkin has cooled, then blend to a smooth purée in a food processor. By making sure the pumpkin has cooled you should avoid a dense cake. Scoop it into a mixing bowl and mix in 3 tablespoons milk and the egg.</p>
<p>&nbsp;</p>
<p>3. Sift the flour, baking powder, bicarbonate of soda, sugar, mixed spice, nutmeg and seasoning into the cleaned bowl of the food processor. Add the butter and process until the mix looks like fine breadcrumbs.</p>
<p>&nbsp;</p>
<p>4. Add to the purée and stir until just mixed, adding the remaining milk if the mixture seems dry. Stir in the poppy seeds and grated lemon zest. Spoon the mix into the loaf tin and bake for 45 minutes until well risen and golden.</p>
<p>&nbsp;</p>
<p>5. Remove the cake from the tin and cool on a wire rack. Remove the paper and serve cut into slices.</p>

We are actually not huge fans of Halloween, so this is about all we do (I guess you could say that we&#8217;re Halloween scrooges!) &#8211; that and enjoying lots of seasonal food, including this pumpkin, carrot and bacon soup. <span id="more-100"></span></p>

<p>I decided to look for a recipe using pumpkin, and after trawling through loads of different recipes on the internet I settled on a soup recipe, but I&#8217;ve basically combined lots of ideas from lots of different recipes to come up with this one. I must admit that pumpkin isn&#8217;t really a vegetable that I usually use, and I suppose that true for quite a lot of people in the UK. But now I&#8217;ve tried this out I&#8217;ll definitely be using it every Autumn! You could always leave out the bacon to make a vegetarian version of the recipe &#8211; just remember to add some salt if you do!</p>

<h3>Ingredients</h3>
<p>1 tbsp olive oil</p>
<p>200g/7oz brown onions, chopped</p>
<p>3 large carrots, chopped</p>
<p>1 medium sized pumpkin, chopped with outer skin removed</p>
<p>125g/4.5oz smoked back bacon, cut into small pieces</p>
<p>1 tbsp ground cumin</p>
<p>750ml/1pt 7floz vegetable stock</p>
<p>Black pepper (season to taste &#8211; also add salt if not using bacon)</p>

<h3>Method</h3>
<p>1. Heat the oil in large pan or stock pot and add the onions. Cook on a low heat until softened.</p>
<p>2. Add the pumpkin, carrots, bacon and cumin. Season, stir well, cover and cook for around 10 minutes.</p>
<p>3. Add the stock and raise the heat to bring to the boil. Then lower the heat and simmer (uncovered) for 20-25 minutes or until the pumpkin is soft.</p>
<p>4. Leave to cool and then blend with a hand blender. I like my soup to be quite chunky, but you could puree it if you prefer.</p>

<p>I&#8217;ve also been making some gorgeous Yorkshire Parkin which is just perfect for a cold Autumn night in! I&#8217;ll post this recipe tomorrow because I haven&#8217;t managed to take a good photo of it yet&#8230;that&#8217;s if there is any left in the morning, it&#8217;s so delicious <img src="https://s.w.org/images/core/emoji/16.0.1/72x72/1f642.png" alt="🙂" class="wp-smiley" style="height: 1em; max-height: 1em;" /> And makes a great dessert after having some of this delicious pumpkin, carrot and bacon soup!</p>
