Citrus and marzipan Bakewell tart

 

If you’re looking for a sweet Easter treat, look no further! This delicious citrus and marzipan Bakewell tart is a twist on a classic Bakewell. It is perfect for an Easter lunch – or for any other occasion actually! To make it┬ásuper special, you could make your own lemon curd. The original recipe says to use a 12 x 35cm tin, but I used two small round loose-bottomed ones instead [Edit: I have used both round and rectangular tins and both work equally well!] I popped one of them in the freezer (un-iced) and it froze very well, so if you’re prepping for a party you could make this in advance.

Jamie Oliver’s Beef Stroganoff

As many of you will already know, I’m a huge fan of Jamie Oliver’s recipes. I’ve blogged about a few of his recipes in the past, perhaps the most popular being the pork marsala with mushroom rice. That recipe, and this beef stroganoff, are taken from Jamie’s 15-Minute Meals. Many people have said that the recipes take a little longer than 15 minutes, but this stroganoff was super quick! I have to admit that I’m a real cereal fanatic – particularly when it comes to muesli! I usually mix up my own with lots of fruit and nuts, and when I saw these breakfast bars I just had to give them a go. This recipe comes from Nigella Lawson’s ‘Nigella Express‘ and she says that she’s addicted to these – now I know why! They store well in an air tight tin and are perfect for breakfast on the go, or for a mid-morning snack.

Sticky honey, almond and banana cake

We have friends staying this weekend and I’m a firm believer that there should always be cake in the house when people come to stay. So I made this old favourite – it’s actually the only way me and Tom will eat bananas! I use my brownie pan to make this sticky honey almond and banana cake in, which requires double the amounts shown here (and it makes 4 muffins too). Photo cards are really simple to make, and you can customise them for every occasion. I do find myself looking at a view and thinking ‘that would make a lovely card’, so be warned – once you’ve started, you’ll always be looking for that perfect photo! You just need a few simple things to be able to make beautiful cards for all occasions.
