So Easter has been and gone, and it’s back to work tomorrow. I’ve been doing my best to avoid the Sunday blues by keeping super busy all day – I’ve actually done quite well for once, which is really unusual for me! I’m trying not to focus on the negative things about going back, as we’ve had such a lovely holiday. So instead, I’ve been trying to think about how I’m going to do a bit more exercise (now it has been okayed by the physio) and how we can eat more healthily. I found this in my recipe book the other week and decided I’d make it this weekend. If you’re looking for a healthy but really super delicious curry recipe, then look no further! This curry is amazingly good and is taken from The Medicinal Chef: Healthy Every Day by Dale Pinnock. It has become one of our go-to recipes because it’s also pretty quick to make, so we often make it during the week. It serves 4 so we eat a bit on the day we make it and then freeze the rest. Tom’s Cassoulet

Tom is making his recipe debut on my blog today – he quite often makes things up when cooking, and this is what he made up for dinner tonight! A yummy cassoulet which was carb-free (great if you’re trying to eat healthily). He left the sausages whole so that there would be leftover veggie stuff – this will go great with a jacket potato or some pasta so we’ll box it up for the freezer. Continue reading…
