Hot Cross Buns

Hot cross buns are my favourite Easter treat by far – in actual fact, I love them so much that I tend to eat them all year round! (They do sell them all year round in Marks and Spencer, which is very helpful.) I did once ask Tom’s Dad, Keith, if he would like a hot cross bun – it just happened to be on the day before Christmas Eve, and being a Methodist minister he found my mix-up of festive foods rather amusing!

Orange and Almond Cake

Whilst I was doing some sleepy baking last night (see yesterday’s post!), Tom was making another cake. His looked much better than mine and it tasted amazing too – possibly the moistest (is that a word?) cake I’ve ever had, and really zingy too. Mary Berry’s Lemon Victoria Sandwich

Mary Berry’s Lemon Victoria Sandwich recipe was specially commissioned by the GDST for the 140th anniversary of the Girls’ Day School Trust and appeared in issue 12/13 of Verve Magazine (also available online here). Mary Berry is a GDST alumna, and all girls were given a postcard with the recipe to celebrate the Bake Off event (the final of which was just by one of the hosts of The Great British Bake Off, Mel Giedroyc – another GDST alumna!). I used to teach music at Central Newcastle High School which makes me an ‘Old Girl’, and as I love baking I just had to try out this recipe. Luscious Lemon Curd

I absolutely love lemon curd – sweet and tangy, it goes really well with so many things. It tastes amazing on a toasted hot cross bun! It is one of those things that is so much better when you don’t buy the shop-bought stuff. Previously, I’ve tried to buy it at places like coffee mornings where you know that someone has made it with just 5 ingredients, without including a load of preservatives.

Falafel Wraps with Grilled Veg

This is the final new recipe that we have tried out this week, and is another from Jamie’s 15-Minute Meals. I’m really impressed with this book – loads of lovely dishes that you can make during the week. As with some of the recipes from 30 Minute Meals it took me longer than the book suggested, but to be honest I’ll be making them again and will get much quicker so I’m not too bothered! Chicken with Tomatoes and Peppers

Another of the new recipes that we have tried out this week is Nigella Lawson’s Chicken with Tomatoes and Peppers. This is a super easy recipe to make and it’s really tasty, and you could cook it on a school night which is always great! I also think that leftovers would make an excellent lunch too, or just pop it in the freezer for another day. We served this with orzo pasta, but it would go well with green veg or some crusty bread.
