Orange and Almond Cake

Whilst I was doing some sleepy baking last night (see yesterday’s post!), Tom was making another cake. His looked much better than mine and it tasted amazing too – possibly the moistest (is that a word?) cake I’ve ever had, and really zingy too. If you haven’t read the Holstee Manifesto, then this post is for you. If you have, then it will serve as a reminder to live each day to the fullest. I first read it last year but a friend posted it on Facebook this week and after a pretty stressful week, it was good to read it again.

Online tutorials: How to make bunting

Last week, I wrote a post about the variety of online tutorials available on how to make bunting, but for some reason it wouldn’t upload and then it deleted itself! So now I’m going to try to recreate it…I really want to have a go at making some bunting for our garden at some point this year. Mary Berry’s Lemon Victoria Sandwich

Mary Berry’s Lemon Victoria Sandwich recipe was specially commissioned by the GDST for the 140th anniversary of the Girls’ Day School Trust and appeared in issue 12/13 of Verve Magazine (also available online here). Mary Berry is a GDST alumna, and all girls were given a postcard with the recipe to celebrate the Bake Off event (the final of which was just by one of the hosts of The Great British Bake Off, Mel Giedroyc – another GDST alumna!). I used to teach music at Central Newcastle High School which makes me an ‘Old Girl’, and as I love baking I just had to try out this recipe. Luscious Lemon Curd

I absolutely love lemon curd – sweet and tangy, it goes really well with so many things. It tastes amazing on a toasted hot cross bun! It is one of those things that is so much better when you don’t buy the shop-bought stuff. Previously, I’ve tried to buy it at places like coffee mornings where you know that someone has made it with just 5 ingredients, without including a load of preservatives.
